Sheet Pan Chicken & Veggies

One pan, one cleanup. Boneless chicken thighs, halved baby potatoes and broccoli are tossed with olive oil, Italian seasoning and garlic powder and roast together in a hot oven. Steps

  1. Heat the oven to 425°F. Cut the baby potatoes in half.
  2. On a large sheet pan, toss the chicken thighs (boneless, skinless — bone-in ones need about 15 minutes more), the potatoes and the broccoli with the olive oil, the Italian seasoning and the garlic powder until everything is lightly coated. Spread it out in a single layer, using two pans if one is crowded — crowded food steams instead of browning.
  3. Bake for about 25 minutes. Check that the potatoes are browned and tender when poked with a fork, and the thickest thigh reads 165°F on a thermometer.
  4. Squeeze the lemon over everything on the pan and serve.
