Garlic Butter Green Beans

Fifteen minutes and one pot. Fresh green beans boil until bright green and tender with a little snap, then get drained well. Garlic softens in butter in the same pot, and the beans go back in to be tossed with black pepper. Simple enough to put next to anything, and the garlic butter is what gets them eaten.

Steps

  1. Snap or cut the stem ends off the green beans. Chop the garlic cloves finely.
  2. Bring a large pot of water to a boil with the salt, add the beans and boil for 4 to 5 minutes. Check that they are bright green and tender with a slight snap. Drain them well — wet beans will not take on the butter.
  3. Put the empty pot back over medium heat and melt the butter. Add the garlic and cook for about 30 seconds, stirring, just until it smells good. Do not let it brown, or it turns bitter.
  4. Return the beans to the pot, toss to coat them in the garlic butter, season with black pepper and serve.
