Honey Garlic Chicken

Sticky, sweet and garlicky, the kind of dinner kids tend to finish. Bite-size chicken browns in a skillet, then a sauce of honey, soy, garlic, a splash of vinegar and a little cornstarch goes in. In two or three minutes it thickens into a glaze that clings. Serve it over rice with sesame seeds and green onion. About twenty-five minutes.

Steps

  1. Start the rice per the package directions — the chicken takes about 15 minutes once the pan is hot, and rice waits better than chicken.
  2. Slice the green onion and chop the garlic finely first, while the board is clean. Then cut the chicken into 1-inch cubes. Whisk the honey, the soy sauce, the vinegar, the garlic and the cornstarch together in a small bowl.
  3. Heat the olive oil in a large skillet over medium-high heat for about a minute, until hot but not smoking. Add the chicken in a single layer and leave it alone for 2 minutes so it browns instead of steaming, then stir and cook for 4 minutes more. Check that the pieces are browned on most sides.
  4. Pour the sauce over the chicken and cook, stirring, for 2 to 3 minutes. Check that the sauce has thickened and clings to the chicken and the biggest piece reads 165°F on a thermometer.
  5. Serve over the rice with the sesame seeds and green onion on top.
