Teriyaki Salmon

Start the rice first, because the salmon only takes the last few minutes. Steps

  1. Start the rice per the package directions. Put the broccoli in a microwave-safe bowl with a splash of water, cover, and microwave on high for 3 to 4 minutes. Check that it is bright green and tender. Slice the green onion.
  2. Pat the salmon dry with paper towels. Heat the vegetable oil in a large skillet over medium-high heat for about a minute, until hot but not smoking.
  3. Lay the fillets in skin-side down and cook for 4 minutes without moving them — moving is what tears salmon apart. Check that the skin has crisped and the sides of the fish have turned pale pink halfway up.
  4. Flip gently with a wide spatula and cook for 2 to 3 minutes more, then pour in the teriyaki sauce and spoon it over the fish for a minute. Check that the fish flakes easily with a fork and reads 145°F on a thermometer.
  5. Serve the salmon over the rice with the broccoli alongside, the pan sauce spooned over, and the sesame seeds and green onion on top.
