Steps

  1. Peel the russet potatoes and cut them into even 2-inch chunks so they finish cooking at the same time.
  2. Put the potatoes in a large pot, cover them with cold water by an inch and add the salt. Bring to a boil over high heat, then turn the heat down to medium and simmer for 15 to 18 minutes. Check that a fork slides into a chunk with no resistance.
  3. Drain the potatoes and let them sit in the hot pot, off the heat, for 1 minute so the steam dries them out — this is what keeps them from going watery.
  4. Warm the milk in the microwave for about 30 seconds. Add the butter and the warm milk to the potatoes and mash until smooth. Cold milk makes them gluey, so do not skip the warming.
  5. Season with black pepper, taste for salt, and serve with extra butter for the table.
