Homemade Pizza Night

Pizza night where everyone tops their own section. Refrigerated dough gets pressed out on a sheet pan, then the sauce and mozzarella go on. Steps

  1. Heat the oven to 425°F. Brush a large sheet pan with the olive oil. Unroll the refrigerated pizza dough onto the pan — one pan per can when the list shows two — and press it out toward the edges with your fingertips; if it springs back, let it rest for 5 minutes and try again.
  2. Dice the bell pepper and slice the mushrooms. Put the pepperoni, the peppers and the mushrooms in small bowls so everyone can top their own section.
  3. Spread the pizza sauce over the dough, leaving a bare inch at the edge for the crust, and scatter the mozzarella over it. Add the toppings by section — the plain half stays plain — and sprinkle the Italian seasoning over everything.
  4. Bake for 14 to 18 minutes. Check that the crust is golden underneath (lift a corner with a spatula), the cheese has melted and browned in spots, and the pepperoni is crisp at the edges. Pepperoni is a ready-to-eat cured sausage, so the oven only has to heat it through — by the time the cheese has browned it is well past 165°F, the reheating figure. Cut into squares and let it cool for 3 minutes before serving.
