Greek Salad

Cucumber and tomatoes cut into chunks, not slices, with thin red onion, kalamata olives and an oregano vinaigrette. It has no lettuce and needs no cooking. The feta is crumbled over the top at the very end so it stays in pieces. It's good against anything off the grill and belongs next to the gyros. Fifteen minutes.

Steps

  1. Cut the cucumber and the Roma tomatoes into chunks rather than slices — this salad is meant to be forked, not layered — and put them in a large bowl.
  2. Slice the red onion as thinly as you can and add it to the bowl with the kalamata olives, pitted and halved.
  3. In a small bowl, whisk the olive oil, the red wine vinegar and the oregano together, pour it over the salad and toss.
  4. Crumble the feta cheese over the top at the end so it stays in pieces instead of disappearing into the dressing. Serve cold.
